We were a bit pressed for dinner, I didn't have anything thawed (my bad!). The Colonel said, how about pizza? Well, OK, but we don't have any hamburger thawed for Meatza. Can't you make a pizza crust with the coconut/almond flour? Why, sure I can!
So I did.
I went to Tropical Traditions Free Coconut Recipes and found just what I needed (thanks to Jennifer, Bellingham, WA for the submission). After a minor set back flipping the crust over (one did great, the other broke up a bit), we put on sauce, pepperoni, tomatoes, broccoli and green peppers. OK, truth be known, we used cheese too!
Boy, it looked yummy, and smelled yummy, and the Colonel said it was yummy, but my boys didn't care for the crust. I think a lot of it is the texture of non grain flours. Plus add the fact that their Gramma and Papa had been down for a visit, and Gramma brought cake.
Getting the immediate family on board is easy, I can bully them. But, until our extended members live under our roof, there isn't a lot I can do about their food choices. Before next week (we have 2 birthdays and Resurrection Day-Easter), I will make sure that they don't bring anymore grain/sugared items into my house.
The nice thing will be that I can show them the kids won't miss out on "sweet treats" just because I don't load them up on wheat flour and sugar. I am still working on the menu. The Puddin' will be turning 18 and has requested pizza (from Round Table, sometimes you gotta bend). For The Peanut, who is turning 3, I will make some finger foods that everyone can live with, meatballs, fruit, veggies, and such.
Resurrection Day, it will be a traditional ham, with mashed cauliflower, gravy, green beans (rare in our house, but popular with the in-laws), carrots, and some almond flour biscuits. My fil will kick up the most fuss, followed by the Littles, but all of them can get over it.
The plus side of going P/P is my Colonel. We went on a road trip (where he traded a WWF Royal Rumble pin for a Lord of the Rings, THANKS JOSH!!!), and, because it's convienent, The Colonel stopped at McDonald's for a cheeseburger (I brought my own, since I am on HCG). Even though he's not 100% P/P, he has been getting some healthy wholesome food in him and he ate that burger, which tasted OK, after all, it IS McDonald's! But a bit later, he was looking a bit green at the gills, attack of the crappy food!
I have nothing against fast food. It's cheap, it tastes good. The rub is, that almost anything that is massed produced is going to be nutritionally void. People have to make a decision. Eat garbage that is served for convenience, or be prepared and bring your own when out and about. Even if you can't, there is a grocery store in just about every town. They will sell something that is wholesome and delicious, and won't make your stomach upset. It's a mindset thing. You have to have a mindset that convenient isn't necessarily good.
Be a rebel, buck the system!
